In response to Trevor's question about hoagie rolls, I've found that 
you can divide and shape the dough as soon as you remove it from the 
fridge, and then, in approx. 2 hours, the rolls should be ready to 
bake. If, instead, you wait the two hours to divide and shape, you 
can probably proof and bake them in 60-90 minutes. Either method 
works.  Hope this helps.
