creme fraiche cream

Smart and Final  wholesale grocers in So. Calif (and I believe other
areas) carry  "Manufacturers Cream"  in half gallon cartons.
This is pasturized but not ultra-pasturized and homogenized - it will
separate to a degree.

It makes beautiful creme fraiche,  clotted cream (Devonshire cream or
Cornish cream type).  You can also use it for making double cream 
cheeses,  fresh whipped butter, etc.  And Ice cream.....wow.   I just 
finished making a batch of ginger ice cream.

It is also perfect for cream sauces etc., because it does not "break" as
easily as regular cream.
