Is the large package of yeast at Sam's the wet compressed stuff? Or is it
just a block of the dry? That is all I could find.

Yes, Joan. Freeze the dry yeast. The idea is to keep those ornary lil
critters asleep until you're ready for them to go to work. Kind of like a
bear hibernating in the woods til spring.
