salt and powdered milk

Lately I have been ommiting the salt and the powdered milk on my bread, and 
I really have not noticed any differences.
The best bread I have been making is the Honey Oat that was posted some days 
ago, but I made some changes, I put
1 cup white flour
1 cup whole wheat flour
two BIG tablespoons honey
1 cup sour dough starter 
2 teaspoons yeast
more than one cup water, as needed

first by mistake and than seeing it was not needed I skipped salt and milk

It comes out great
