Bread-Bakers v005.n015.9

This sounds suspiciously like what a friend of mine buys from
a Bosch dealer. Hers is called "dough enhancer" and is very
inexpensive in bulk. She shared some with me last time I was
there and it REALLY made a difference in the consistency of the
loaf. I have yet to find it around here. The ingredients are
similar to what some flours have added to them to be called
"bread flour", but there's more to it than that.
