    2               cups  all-purpose flour
    1                cup  sugar -- plus divided
    1 1/2      teaspoons  sugar
    3          teaspoons  baking powder
       1/2      teaspoon  salt
       1/2      teaspoon  ground ginger
    2                     eggs
       1/2           cup  buttermilk
       1/4           cup  canola oil
    1         tablespoon  grated lemon peel
    1 3/4           cups  sliced rhubarb -- fresh or frozen

In a large bowl, combine the flour, 1 cup sugar, baking powder, salt 
and ginger. In a small bowl, combine the eggs, buttermilk, oil and lemon peel.

Stir into dry ingredients just until moistened.

Fold in rhubarb.

Fill paper-lined muffin cups two-thirds full.

Sprinkle with remaining sugar.

Bake at 375F for 20-25 minutes or until a toothpick inserted near the 
middle comes out clean.

Cool for 5 minutes before removing from pan to a wire rack.

Yield: 1 dozen.
