    1                cup  flour
       1/4           cup  sugar
    3          teaspoons  baking powder
    1                cup  cornmeal -- or bran
       1/4           cup  shortening -- or butter, softened
    1                     egg -- beaten
       1/2           cup  milk
    1                cup  drained, crushed pineapple -- canned or fresh

Sift flour; sugar; baking powder and salt together.

Stir in cormeal or bran

Blend in shortening with a fork or your figertips to make a crumbly mixture.

Add eggs, milk, and pineapple, and stir to blend.

Place in well-greased muffin pans.

Bake at 425F for 15-20 min until golden brown.

This will make about 2 dozen muffins
