    1                cup  all-purpose flour
    1                cup  whole wheat flour
    1           teaspoon  baking powder
       1/2      teaspoon  baking soda
       1/4      teaspoon  salt
    1                cup  sugar
    1                cup  mashed ripe bananas -- (2 medium)
       3/4           cup  silken soft tofu
       1/4           cup  canola oil
    1           teaspoon  vanilla extract
       1/2           cup  chopped walnuts

Prep: 20 min. Bake: 50 min. + cooling Yield: 12 Servings
Silken tofu is a wonderful egg substitute

In a large bowl, combine the first five ingredients. In a small bowl, 
beat the sugar, bananas, tofu, oil and vanilla. Beat into dry 
ingredients just until moistened. Fold in walnuts.

Transfer to an 8" x 4" loaf pan coated with cooking spray. Bake at 
350F for 50-55 minutes or until a toothpick inserted near the center 
comes out clean. Cool for 10 minutes before removing from pan to a wire rack.

Yield: 1 loaf (12 slices).
