Waffles and Syrup

The waffle recipe goes very well with the syrup recipe.  We had them 
for dinner tonight and they were very tasty and sure made the kitchen 
smell nice.

                          Waffles, Gingerbread <R&J>

    1                cup  all-purpose flour -- unbleached, (4 1/4 oz)
    1                cup  white whole wheat flour -- (4 oz)
    2          teaspoons  baking powder
       1/2      teaspoon  baking soda
       1/2      teaspoon  salt
    1 1/2      teaspoons  ground ginger
       1/4      teaspoon  grated fresh nutmeg
       1/4      teaspoon  ground cloves
    4              large  eggs
    6        tablespoons  unsalted butter -- (3 oz), melted and cooled
    1                cup  milk -- (8 oz)
       1/2           cup  sour cream -- (4 oz)
    3        tablespoons  molasses -- (2 1/4 oz)

Preheat your iron while you make the waffle batter.  Whisk together 
the flours, baking powder, baking soda, salt and spices.  In a 
separate bowl, whisk together the eggs, melted butter, milk, sour 
cream, and molasses.  Add the wet to the dry mixture ingredients, 
mixing until just combined.  The batter will be lumpy; that's 
ok.  Cook the waffles as directed in the instructions that came with 
your waffle iron.

Yield: 10 waffles

                       Syrup, Apple Brown Sugar  <R&J>

    3        tablespoons  unsalted butter -- (1 1/2 oz)
    1                cup  medium diced apples -- (4 oz)
    2               cups  brown sugar -- (15 oz)
    2        tablespoons  water -- (1 oz)
       1/4           cup  corn syrup -- (2 1/4 oz)
    1         tablespoon  rum -- optional

Melt butter in 2 qt saucepan.  Add apples and cook for 2 min.  Add 
the brown sugar, water, corn syrup, rum and simmer for 3 - 4 min, 
stirring occasionally.

Yield: 10 servings, 1/4c each
