Lisa:  I use a VitaMix to grind wheat berries into flour; you can 
also knead the dough in the machine, although I prefer to do that by 
hand (I personalize the dough as I punch it and slap it around; 
solves a lot of daily tensions).

Mar:  potato water feeds the yeast.  Even better to mash the boiled 
potatoes and include them in the dough.
