Re the lecithin question:  King Arthur catalogue has dried lecithin that is 
much easier to use than the liquid.  Keep it refrigerated as all lecithin 
can get rancid and give a horrible taste to the bread!
P.S. I'm really enjoying the sourdough starter controversy!
