Our church recently purchased a commercial stove. While regulatiosn will
vary from place to place, we were told that IF the local fire code
requires a range hood, that the hood runs to about a thousand dollars
a linear foot (i.e., for a 6-foot-wide stove it's a six-foot hood), including
installation, ductwork, etc. But that it is up to the local fire codes
as to whether or not you need to do that.

If you install it in a residence the rules may well be different.
