Add the last 1 t yeast by sprinkling on the flattened out dough after first rise. Shape to log & allow to rise to double, on a baking sheet sprinkled with grits. Bake 460F 20 min Then reduce to 400F 30 min, until done. Preheat oven to 375F. Line twelve 2 1/2" muffin cups with paper liners. Set aside. 2. Stir together flour the 3/4C sugar, baking powder, and salt in a med mixing bowl. Make a well in the center of flour mixture; set aside. 3. Whisk together eggs, buttermilk, and 6T melted butter; add all at once to the dry mixture. Stir just util moistened (batter should be lumpy). Fold in blueberries. Remove 1C of batter. 4. Spoon remaining batter into prepared muffin cups, filling about half full. Spoon 2ts of blueberry preserves into the center of each muffin. Top with remaining batter to cover the prserves, filling muffin cups about 2/3 full. Bake 20 min or until golden. 5. Meanwhile, stir together orange peel, lemon peel and the 2T sugar. Remove muffins from oven; brush with 2T melted butter. Sprinkle citrus-sugar mixture on top. Cool in muffin cups on wire rack 15 min. Serve warm. Makes 12 servings. Preheat oven to 350 degrees F. Grease and flour the bottom and 1/2 inch up the sides of a 9x5x3-inch loaf pan; set aside. 2. In a large bowl stir together flour, sugar, baking powder, and salt. In a medium bowl beat egg with a fork; stir in coconut milk and melted butter. Add egg mixture all at once to flour mixture. Stir just until moistened (batter should be lumpy). Fold in 1 cup of toasted flaked coconut. 3. Spoon one-third of the batter into prepared pan. Spoon half of the 3/4 cup marmalade over batter. Repeat with remaining batter and marmalade, ending with batter. Using a thin metal spatula or table knife, swirl the marmalade through the bread. 4. Bake 55 to 60 minutes or until a wooden toothpick inserted near center comes out clean. Cool in pan on a wire rack 10 minutes. Remove from pan. Cool completely on wire rack. Wrap with plastic wrap; store at room temperature overnight before slicing. 5. Before slicing, brush top of loaf with 1 Tbsp. melted marmalade. Sprinkle with 1/4 cup toasted coconut. *Note: Melting marmalade Spoon marmalade into a 2C microwave safe measuring cup. Heat 1 to 1 1/2 min on 100% power, stirring every 30 sec until marmalade is a spoonable consistency. (If softenig only 1 - 2T of marmalade, heat just 20 - 30 sec.) *Note: Toasting coconut To toast, place coconut in a shallow baking pan. Toast in a 350F oven 5 to 7 minutes or until it starts to brown, stirring once. Watch carefully, coconut can quickly go from golden to burned. Date: Sun, 21 Apr 2013 16:28:09 -0400 So our Kitchenaid mixer crashed today, as I knew it eventually would. Our first one lasted 35 years and burnt out, and was replaced by a similar (Hah!) looking one that worked okay for four years, until today when a steel measuring cup fell into a batter and caused the plastic (!) gears in the head to strip. I'm definitely not going to buy another Kitchenaid, partly because of this, and partly because I have a wonderful Magic Mill Assistent that I bought used a few years ago from Judy on this list. Thanks Judy - it still works great for bread, which I make, but my wife isn't comfortable with changing the way she works, so it's possible that we may buy a new machine. I understand that Bosch has some happy followers, so we may go that way. In the meantime, I am quite capable with tools and electrics, so I am asking whether anyone has experience with obtaining new gears from Kitchenaid and replacing them. Does one need special tools to disassemble the housing and replace the gears? Is it even possible? All comments and advice are welcome.
