It's subtitled "A Baker's Atlas" and that pretty much describes what it does. After the obligatory ingredients-equipment-techniques section, they go from section to section of the world presenting the regional flatbreads and recipes for common accompaniments. Another book by the same couple, "Home Baking Around the World", also has a lot of interesting stories along with some more good breads.
