I am no longer able to knead by hand and I am very taken with the recipes for the new no-knead breads If any one has a recipe for a good, seeded rye I would love to have it. Thank you all for everything you contribute May --------------- MESSAGE bread-bakers.v110.n006.2 --------------- From: Jim Neuman Subject: Cornbread Date: Mon, 15 Feb 2010 07:41:29 -0500 I had some great cornbread in a Colonial Williamsburg pub. It had a cake-like texture, and when I asked about it I was told that it had a cake mix in it. They refused to give me the recipe. Anybody out there that can help? Life is good! Jim Neuman --------------- MESSAGE bread-bakers.v110.n006.3 --------------- From: R K Johnson Subject: "wrinkled bread top" Date: Wed, 17 Feb 2010 17:59:02 -0500 Thanks to the many supporters who wrote with suggestions. I'm sure all were possible fixes, but as it is in many cases, the simplest is often the best. Joyce suggested cooling the loaf more slowly by covering it with a towel in a warm place, and that worked beautifully. Thanks, Joyce. Our house is indeed much cooler in the wintertime, so I used a very slightly warm oven and a towel and look, ma, no wrinkles. Thanks to everyone again. Bob R. K.
