One bread I baked at once, the second one proofed about 12 h in the refrigerator. Both breads were delicious, but he flavour of the second one was infinitely better. So if you want to use the bread machine, you should do the proof in the refrigerator. I made mine by hand: http://www.zippyimages.com/81362.html http://www.zippyimages.com/81364.html Ulrike Westphal --------------- MESSAGE bread-bakers.v104.n033.2 --------------- From: Wcsjohn@aol.com Subject: Iris - Bread stones Date: Sat, 17 Jul 2004 08:05:17 EDT Iris, Stones for baking bread, small ones, 12" diameter, are sold in loads of places in the UK, any department store with a kitchen dept will sell them. You don't want to pay shipping costs from USA, it would cost more than the stone, they are heavy. If you Google "pizza stone" or "baking stone" and limit the search to .co.uk you should be able to find a stone under 10 GBP. If you pay more than 10 GBP you're being ripped off. Don't buy a HearthKit "oven insert", it is grossly overpriced and no more effective than a cheap stone. As always, I not only received great advice, I received extra tips and tricks! If it has anything to do with flour and and oven, this is the site to visit! In fact, I got my best advice for those two items from this site. (bread flour from North Dakota and cold start!) Thanks again, Fredericka --------------- MESSAGE bread-bakers.v104.n033.5 --------------- From: Harold Chapman Subject: re KitchenAid mixer bowl also baking stones. Date: Sat, 24 Jul 2004 18:51:08 -0400 My 5 qt Kitchen aid mixer walked off the counter. Fortunately it landed on a piece of carpet rather than our new laminate floor. However the bowl is warped. It still works but if anyone has the bowl from a defunct mixer I would like to buy it. I am going to be in Ct in August so could save postage by having it mailed there. The baker in England could go to a source of tiles and buy a large unglazed ceramic tile or a set of small ones.
